Kansas sliders are small, oniony griddle burgers served by the sack, not the single. They are soft, steamy, simple, and born from the early days of America’s fast-food burger obsession.
History
Kansas has a serious claim in slider history because White Castle began in Wichita in 1921. Walt Anderson and Billy Ingram helped turn small square hamburgers into an American fast-food model, selling inexpensive little burgers that were easy to eat by the handful.
The slider idea spread quickly, and Salina’s Cozy Inn opened in 1922, just one year after White Castle. Cozy Inn’s tiny onion-laden burgers became a Kansas institution, served from a small diner with a famously simple menu.
The word “slider” has a few origin stories. Some say it refers to the way the small burgers slide down easily; Cozy Inn’s own history points to the practice of sliding the steamy sandwich down the counter on waxed paper. Either way, the name stuck.
Today, sliders can mean almost any mini burger, but the Kansas version is more specific: small beef patties cooked with onions, soft buns, and a no-nonsense approach. They are not supposed to be towering gourmet burgers. They are supposed to come in multiples and disappear fast.

- Divide the beef: Divide the beef into 12 small balls.
- Heat the griddle: Heat a griddle or large skillet over medium-high heat.
- Add onions: Scatter a spoonful of chopped onion onto the griddle for each burger.
- Add beef: Place a beef ball on top of each onion pile.
- Smash: Smash each ball thin with a spatula.
- Season: Season with salt and pepper.
- Cook: Cook for 2 to 3 minutes, until the edges brown and the onions steam into the meat.
- Flip: Flip and cook for another minute.
- Steam the buns: Place buns over the patties briefly to steam.
- Serve: Serve with pickles and mustard.
