Syracuse salt potatoes are small potatoes boiled whole in extremely salty water, then served with melted butter. They are creamy inside, salty outside, and proof that three ingredients can absolutely carry a cookout.

History

Salt potatoes are a Central New York classic, especially tied to Syracuse and its old salt industry. In the 1800s, Irish salt workers around Onondaga Lake reportedly boiled small potatoes in the salty brine they worked with, creating a cheap, filling lunch.

The salty water does two important things. It seasons the potatoes deeply and creates a thin salty crust on the skins as they dry. Inside, the potatoes become unusually creamy because the high-salt water changes how they cook.

By the early 1900s, salt potatoes had become a Central New York favorite at clambakes, barbecues, fairs, and summer gatherings. Hinerwadel’s helped popularize them commercially, eventually selling bags of small potatoes packaged with a 12-ounce salt packet.

Salt potatoes remain one of Syracuse’s simplest and most beloved foods. No peeling, no mashing, no fuss, just small potatoes, salt, butter, and the confidence not to overcomplicate things.

Traditional note: To make it more traditional, use small, whole, unpeeled potatoes and a lot more salt than feels reasonable. The butter is not optional.
