Salt water taffy is a chewy Atlantic City candy pulled into soft, colorful bites and wrapped for boardwalk snacking. Despite the name, it is sweet candy, not a mouthful of ocean.
History
Salt water taffy is strongly associated with Atlantic City, where it became one of America’s first great seaside souvenirs. The candy’s exact origin story has some folklore attached, but the classic legend involves a candy shop flooded by seawater in the late 1800s and a joking reference to “salt water taffy.”
Whether or not the flood story is fully true, Atlantic City absolutely made the candy famous. Boardwalk shops sold boxed taffy to beachgoers as a treat they could take home, and the colorful wrapped pieces became part of the shore experience.
Joseph Fralinger helped turn salt water taffy into a major Atlantic City souvenir by boxing it attractively and marketing it to visitors. Enoch James later refined the candy’s texture and shape, helping create the smoother, bite-size style many people know today.
Modern salt water taffy comes in dozens of flavors, from vanilla and chocolate to banana, peanut butter, watermelon, and whatever else a shore candy shop can dream up. It is chewy, nostalgic, and practically required on the boardwalk.

- Prepare the surface: Butter a baking sheet or marble slab.
- Mix sugar and starch: In a saucepan, whisk together sugar and cornstarch.
- Add remaining candy ingredients: Add corn syrup, butter, water, and salt.
- Dissolve the sugar: Cook over medium heat, stirring until the sugar dissolves.
- Cook the candy: Continue cooking without stirring until the mixture reaches about 255°F.
- Cool slightly: Pour onto the prepared sheet and let cool until safe to handle.
- Add flavor and color: Add flavoring and coloring.
- Pull the taffy: With buttered hands, pull the taffy until it becomes lighter in color and firmer.
- Cut: Stretch into ropes and cut into bite-size pieces.
- Wrap: Wrap each piece in wax paper.
