History

Nashville hot chicken is one of Tennessee’s most famous foods, rooted in Nashville’s Black food culture. The best-known origin story centers on Thornton Prince, whose girlfriend supposedly served him extra-spicy fried chicken as revenge after a night out. Instead of suffering quietly, he loved it, and the Prince family eventually turned the dish into a business.

Prince’s Hot Chicken Shack became the foundational hot chicken institution, and the style spread through Nashville restaurants, neighborhood spots, and eventually the national food scene. But before it became trendy, hot chicken was a deeply local dish served at family-run restaurants and late-night counters.

The chicken is fried, then brushed or dunked with a cayenne-heavy spice oil or paste. The heat level can range from gentle warmth to “why did I make eye contact with this?” Traditionally, it is served on white bread with pickles, which soak up spice and grease in a very important way.

  2. Mix the dredge: Mix the flour, salt, black pepper, and paprika.

  4. Fry: Fry in 350°F oil until golden, crisp, and cooked through.
  5. Reserve oil: Carefully reserve ½ cup hot frying oil.
  6. Make the hot oil: Stir the cayenne, brown sugar, paprika, garlic powder, chili powder, and salt into the hot oil.
