History
The muffuletta was created in New Orleans by Salvatore Lupo, a Sicilian immigrant who founded Central Grocery in 1906. The sandwich was designed as an easier way for Sicilian workers and customers to eat bread, meats, cheese, and olives together.
The bread is key: a round Sicilian-style sesame loaf sturdy enough to hold layers of salami, ham, mortadella, provolone, Swiss, and olive salad. The olive salad, chopped olives, pickled vegetables, garlic, herbs, and oil, gives the sandwich its signature punch.
New Orleans had a large Sicilian immigrant community, especially around the French Quarter and the old market area. The muffuletta reflects that history beautifully: Italian ingredients, New Orleans setting, working-person practicality.
Today, Central Grocery is still the origin name, but muffulettas are served all over the city. Some are cold, some are toasted, and some are enormous enough to feed a committee.
