History
Funnel cake has deep Pennsylvania Dutch roots. Similar fried batter cakes were brought by German-speaking immigrants, and Pennsylvania Dutch communities helped keep the tradition alive at fairs, carnivals, markets, and festivals.
The name comes from the old method of pouring batter through a funnel into hot fat. The batter falls in loops and ribbons, creating a lacy, irregular cake that fries crisp on the outside while staying tender in thicker spots.
Funnel cake became one of Pennsylvania’s great fair foods because it is dramatic, cheap, fast, and smells like joy from fifty feet away. It fits perfectly at county fairs, amusement parks, church festivals, and boardwalk-style snack stands.
Today, funnel cakes can be topped with powdered sugar, fruit, chocolate, whipped cream, ice cream, or candy, but the classic version is still the best starting point: hot fried batter and a snowstorm of powdered sugar.

- Mix the dry ingredients: Whisk flour, sugar, baking powder, and salt in a bowl.
- Mix the wet ingredients: In another bowl, whisk eggs, milk, and vanilla.
- Make the batter: Stir the wet ingredients into the dry ingredients until smooth.
- Heat the oil: Heat 2 inches of oil in a heavy pot to 375°F.
- Pour: Pour batter into a funnel, squeeze bottle, or measuring cup with a spout.
- Fry: Drizzle batter into the hot oil in overlapping circles and loops.
- Turn: Fry for 1 to 2 minutes per side, until golden brown.
