History
The Garbage Plate is Rochester’s signature food, born at Nick Tahou Hots. The restaurant traces its roots to 1918, when Greek immigrant Alexander Tahou opened what would become a Rochester institution.
The classic plate is built from layers. First come the sides, usually macaroni salad and home fries or French fries. Then comes the protein: cheeseburgers, hot dogs, white hots, red hots, sausage, chicken, or another option. Finally, it gets topped with Rochester-style meat hot sauce, onions, mustard, and sometimes ketchup.
The name reportedly came later, when customers asked for a plate with “all the garbage” on it. Nick Tahou Hots trademarked the name, which is why other restaurants often call their versions “plates,” “Rochester plates,” or something similar.
A Garbage Plate is not delicate food. It is late-night food, college food, road-trip food, “I skipped lunch and made a mistake” food. The magic is that all the parts somehow become one messy, spicy, starchy, deeply satisfying meal.
