The truth is probably messier than one perfect accident story. Fried pasta dishes existed before St. Louis made toasted ravioli famous, but the city undeniably turned this version into a local icon. What matters is that St. Louis took something that could have been a kitchen mistake and made it mandatory.

Today, toasted ravioli appears on menus all over Missouri, but St. Louis remains the spiritual home. The best versions are crisp outside, tender inside, and sturdy enough to scoop up sauce without collapsing.
