History

Walleye is Minnesota’s official state fish, and it has long been central to the state’s fishing culture. With thousands of lakes and a deep tradition of angling, Minnesota treats walleye as more than just dinner — it is a seasonal ritual, a trophy catch, and a point of local pride.

Fried walleye grew naturally out of shore-lunch cooking. Anglers would clean the day’s catch, coat the fillets simply, and fry them near the water with potatoes, beans, bread, or whatever else was packed along. The fish is mild and firm enough to hold up well in a pan, which made it ideal for this kind of no-nonsense cooking.

Over time, fried walleye moved from lakeside campfires into supper clubs, taverns, fish fries, resort dining rooms, and roadside restaurants. It can be pan-fried in cracker crumbs, beer-battered, deep-fried, broiled, or turned into a sandwich.

The best fried walleye should not taste heavy. The coating should be crisp, the fish should stay tender, and the flavor should be clean and sweet enough that lemon and tartar sauce feel like helpers, not cover-ups.

  1. Prep the fish: Pat the walleye fillets dry and cut them into serving-size pieces.
  2. Make the wet mixture: Whisk the buttermilk and egg in a shallow bowl.
  3. Make the coating: In another bowl, mix crushed crackers, flour, salt, pepper, paprika, and garlic powder.
  4. Coat the fillets: Dip each fillet into the buttermilk mixture, then coat it well with the cracker mixture.
  5. Heat the skillet: Heat about ¼ inch of oil, butter, or a mix of both in a skillet over medium heat.
  6. Fry: Fry the fillets for 2 to 4 minutes per side, depending on thickness, until golden and cooked through.
  7. Drain: Drain briefly on a rack or paper towels.
  8. Serve: Serve hot with lemon wedges and tartar sauce.
Traditional note: To make it more traditional, use fresh-caught walleye if you have it, coat it simply with cracker crumbs or shore-lunch breading, and pan-fry it in butter or oil. Keep the seasoning light so the fish stays the star.
