History

The Fluff Screamer comes from Tony’s Lunch in Girardville, Pennsylvania, a small Schuylkill County spot with one of the strangest and most memorable burgers in the state. The regular Screamer was already a local specialty: a hamburger topped with Tony’s fiery secret chili sauce, raw onions, and a pat of butter.

The Fluff version reportedly started in the 1970s when a teenage regular kept asking for Marshmallow Fluff on her Screamer. Tony’s already had Fluff in the restaurant for hot chocolate, but the request was unusual enough that staff resisted it at first. Eventually, a waitress gave in, made the burger, and other customers noticed. That is how the Fluff Screamer was born.

The combination works because it is not just sweet for the sake of being weird. The spicy chili sauce brings heat, the burger brings salt and fat, the onions bring bite, and the Marshmallow Fluff cools and sweetens the whole thing. Add butter, and the burger becomes messy, rich, sticky, spicy, and oddly balanced.

Today, the Fluff Screamer is one of Pennsylvania’s great hyper-regional foods. It belongs specifically to the Coal Region, and especially to Tony’s Lunch, where the burger has become a local legend.   1. Start the chili sauce: Heat oil in a small saucepan and cook the ground beef or finely chopped hot dogs until browned.
  2. Season the sauce: Add tomato sauce, ketchup, Worcestershire, chili powder, paprika, garlic powder, onion powder, cayenne, broth, salt, and pepper.
  3. Simmer: Simmer for 10 to 15 minutes, stirring often, until thick and spicy. The sauce should be bold and fairly concentrated, not loose like soup.
  4. Shape the burgers: Shape the ground beef into 4 patties and season with salt and pepper.
  5. Cook the burgers: Cook the burgers on a griddle, skillet, or grill until browned and cooked to your liking.
  6. Add cheese: Add American cheese if using.
  7. Toast the buns: Toast the buns lightly if desired.
