History

Cudighi is most strongly tied to Michigan’s Upper Peninsula, especially the Marquette and Ishpeming area. It came from Italian immigrant communities and is often connected to northern Italian sausage traditions, particularly cotechino-style pork sausage.

The sausage itself is the heart of the dish. Cudighi is usually made from ground pork seasoned with warm spices like cinnamon, nutmeg, cloves, garlic, and sometimes wine. That spice blend gives it a flavor that is not quite like standard Italian sausage, not quite like breakfast sausage, and very much its own thing.

Over time, cudighi became a sandwich-shop and pizza-place staple in parts of the U.P. The sausage is formed into a patty or link, cooked, then served on a roll with marinara or tomato sauce, mozzarella, onions, peppers, and sometimes mushrooms.

  3. Shape: Shape the sausage mixture into 6 patties or loose sausage portions.
  4. Heat the skillet: Heat a skillet over medium heat with a little oil or butter.
  5. Cook: Cook the cudighi until browned and cooked through, about 4 to 5 minutes per side for patties.
  6. Warm the sauce: Warm the marinara sauce.
  7. Toast the rolls: Split the rolls and toast them lightly.
  8. Build: Place cudighi on each roll, then top with marinara, sautéed peppers and onions, and mozzarella.
  9. Melt the cheese: Broil briefly until the cheese melts.
Traditional note: To make it more traditional, let the sausage mixture season overnight, use pork with enough fat to stay juicy, and keep the warm-spice profile. Serve it on a sturdy roll with tomato sauce and melted mozzarella.
