Quick Bite

Chicken fried steak is tenderized beef coated like fried chicken, fried until crisp, and smothered with cream gravy. In Oklahoma, it is comfort food with a state-meal résumé and a serious claim on your appetite.

History

Chicken fried steak is one of Oklahoma’s defining comfort foods and became part of the official Oklahoma state meal in 1988. The dish reflects the state’s ranching culture, Southern cooking, and German/Texan schnitzel-style influence all meeting on one gravy-covered plate.

The basic idea is simple: take a cut of beef, usually round steak or cube steak, pound it tender, dredge it in seasoned flour, fry it until crisp, and cover it with peppery cream gravy. The name comes from the cooking method, not the meat — it is beef fried in the style of chicken.

Oklahoma embraced chicken fried steak because it fits the state perfectly. It is hearty, affordable, beef-forward, and built for diners, cafés, steakhouses, truck stops, and Sunday dinner tables. It is the kind of dish that can be both everyday comfort and road-trip destination.

A great chicken fried steak should have a crisp, seasoned crust and tender beef inside. The gravy should be creamy and peppery, but not so heavy that it turns the crust soggy before the first bite.
