- Soak the chicken: Soak the chicken in buttermilk and hot sauce for at least 2 hours or overnight.
- Season the flour: Mix flour, salt, pepper, paprika, and garlic powder in a shallow dish.
- Dredge: Remove chicken from buttermilk and dredge in the seasoned flour.
- Heat the skillet: Heat oil in a heavy skillet over medium heat.
- Brown the chicken: Brown the chicken on both sides until golden.
- Cover and cook: Reduce heat to medium-low, cover the skillet, and cook for 25 to 35 minutes, turning occasionally, until the chicken is cooked through.
- Keep warm: Remove chicken and keep warm.
- Save drippings: Pour off excess oil, leaving about 3 tablespoons of drippings.
- Start the gravy: Whisk flour into the drippings and cook for 1 minute.
- Finish the gravy: Slowly whisk in milk and simmer until thickened. Season with salt and pepper.
