The style is often traced to early 20th-century Italian-American pizzerias in and around Trenton. Papa’s Tomato Pies, founded in 1912, is widely considered one of the oldest continuously operating pizzerias in the United States and a foundational name in the style.
The tomato-on-top method changes the eating experience. The tomatoes stay bright and fresh-tasting, while the cheese melts into the crust and toppings underneath. Sausage, garlic, and extra tomato are classic moves.
Today, Trenton tomato pie remains strongest in Mercer County and nearby towns, but the style has fans across the state. It is not just pizza with a different name — the layering really does matter.
