- Wash the lemons: Wash the lemons very well.
- Slice thin: Slice the lemons paper-thin, removing all seeds.
- Macerate: Place lemon slices in a bowl with sugar.
- Rest: Cover and let sit for at least 4 hours, preferably overnight, stirring occasionally.
- Heat the oven: Heat the oven to 425°F.
- Prepare the crust: Line a pie plate with the bottom crust.
- Beat the eggs: Beat eggs with salt and melted butter if using.
- Mix the filling: Stir the eggs into the lemon-sugar mixture.
- Fill the pie: Pour into the pie crust.
- Top the pie: Add the top crust, seal, and cut vents.
- Finish the crust: Brush with egg wash and sprinkle with coarse sugar if desired.
