History

Monroe County Barbecue comes from the Tompkinsville area of south-central Kentucky. While western Kentucky is famous for mutton, Monroe County has its own distinct style built around pork shoulder.

The meat is not usually smoked low and slow until it falls apart. Instead, pork shoulder is sliced into steaks, grilled over hickory coals, and repeatedly dipped or mopped with a thin, hot vinegar sauce. The result is smoky, tangy, peppery, and a little fiery.

The “dip” is essential. It often includes vinegar, butter or fat, salt, black pepper, cayenne, and other seasonings. The meat may be dipped as it cooks and again before serving. Asking for it dipped, sprinkled, or extra hot is part of the experience.

Monroe County Barbecue is one of Kentucky’s great micro-regional foods. It is specific, local, and best experienced in the county that made it famous. This is not generic barbecue with a Kentucky label slapped on it; this is shoulder, dip, smoke, and pride.

  2. Make the dip: Combine vinegar, water, melted butter or fat, black pepper, cayenne, salt, brown sugar, and garlic powder in a saucepan.
  3. Simmer: Simmer the dip for 5 minutes, then keep warm.
  4. Heat the grill: Heat a charcoal grill to medium heat. Add hickory if using.
  5. Grill: Grill the pork shoulder steaks, turning often.
  6. Mop: Mop or brush with the dip throughout cooking.
  7. Cook through: Cook until the pork is browned, smoky, and tender, about 25 to 35 minutes depending on thickness.
  8. Dip again: Dip or brush again before serving.
  9. Serve: Serve with white bread, vinegar slaw, pickles, or beans.
