A klobasnek is a Texas-Czech pastry made by wrapping soft, slightly sweet dough around sausage, cheese, jalapeños, or other savory fillings. Texans often call it a kolache, but technically the meat-filled one is a klobasnek.
History
Klobasneks come from Texas’s Czech immigrant food culture, especially the communities of Central Texas. Czech immigrants brought koláče, sweet pastries filled with fruit, poppy seed, prune, or cheese, to Texas in the 19th and early 20th centuries. Over time, Texans developed a savory cousin filled with sausage.
The singular is klobasnek, and the plural is often klobasniky. But in everyday Texas speech, many people call both sweet pastries and sausage-filled pastries “kolaches.” This is technically wrong, but so common that correcting people in a gas station line may not be worth the social cost.
West, Texas, is one of the most important towns in the Texas-Czech pastry story. It is known as the Czech Heritage Capital of Texas, and recent reporting notes that Village Bakery in West was an early Texas bakery connected to sausage-wrapped dough; after years closed, it has reopened, which is good news for anyone who believes road-trip breakfast should come in a paper bag.
Today, klobasneks are everywhere in Texas: bakeries, gas stations, donut shops, kolache shops, and roadside stops. The best ones have pillowy dough, a good snap from the sausage, and enough cheese or jalapeño to make the second one seem reasonable.

Instructions
- Mix the dry ingredients: Mix the flour, yeast, sugar, and salt in a large bowl.
- Make the dough: Add the warm milk, egg, and melted butter. Mix until a soft dough forms.
- Knead: Knead for 6 to 8 minutes, until smooth.
- First rise: Cover and let rise until doubled, about 1 hour.
- Divide: Divide the dough into 12 pieces.
- Flatten: Flatten each piece into an oval.
- Fill: Place one sausage, cheese, and jalapeños if using in the center.
- Wrap: Wrap the dough around the filling and pinch the seam closed.
- Arrange: Place seam-side down on a baking sheet.
- Second rise: Let rise for 30 minutes.
- Heat the oven: Heat the oven to 375°F.
- Brush: Brush with egg wash.
- Bake: Bake for 18 to 22 minutes, until golden.
- Finish: Brush with melted butter while warm.
