A Jucy Lucy is a Minneapolis-born burger with the cheese sealed inside the beef patty instead of sitting on top. Bite carefully: that molten cheese center is delicious, but it absolutely fights back.

History

The Jucy Lucy is one of Minnesota’s most famous food rivalries. Two Minneapolis institutions, Matt’s Bar and the 5-8 Club, both claim a major role in the birth of the cheese-stuffed burger. The debate is friendly, fierce, and probably never going away.

Matt’s Bar says the Jucy Lucy was created shortly after the bar opened in 1954, when a customer asked for two patties with cheese sealed between them. According to Matt’s, the customer bit in and declared it “one juicy Lucy,” and the misspelled “Jucy” became part of the legend.

The 5-8 Club also calls itself the home of the Juicy Lucy, spelling it with the extra “i” and offering several cheese-stuffed variations. Its version is a little more polished, while Matt’s is famous for the classic griddled dive-bar experience.

No matter which origin story you choose, the burger became a Twin Cities icon. The trick is sealing the cheese inside so it melts into a lava pocket. The warning is part of the tradition: wait a minute before biting, unless you enjoy learning lessons the hard way.

  1. Divide the beef: Divide the beef into 8 equal portions.
  2. Shape the patties: Flatten each portion into a thin patty, slightly wider than the bun.
  3. Add the cheese: Place folded cheese in the center of 4 patties.
  4. Seal the burgers: Top with the remaining patties and pinch the edges tightly to seal the cheese inside.
  5. Season: Season the outside of the burgers with salt and pepper.
  6. Heat the pan: Heat a griddle or cast-iron skillet over medium-high heat.
  7. Cook: Cook the burgers for 4 to 5 minutes per side, until browned and cooked through.
  8. Rest: Rest for 2 to 3 minutes so the cheese does not immediately attack.
  9. Serve: Serve on buns with pickles, onions, ketchup, and mustard.
Traditional note: To make it more traditional, use American cheese, seal it completely inside the beef, cook the burger on a flat-top or cast-iron skillet, and serve it simply. Warn everyone before the first bite.
