History
Rhode Island hot weiners, also called New York System weiners, are one of the state’s signature foods. Despite the name, they are not from New York. The “New York System” label was used by Greek immigrant-owned lunch counters in Rhode Island to suggest a certain big-city style and speed.
The classic version is a small weiner in a steamed bun topped with yellow mustard, a finely textured spiced meat sauce, chopped raw onions, and celery salt. Ordered “all the way,” it comes with the full lineup. Ketchup is not part of the tradition and may cause side-eye.
Olneyville New York System is the most famous current name. The Stevens family’s hot weiner roots go back to the early New York System counters, and the Providence and Cranston locations still serve weiners deep into the night. The food is quick, cheap, salty, and perfectly matched with coffee milk.

- Start the sauce: Make the meat sauce first. Add ground beef, onion, water, tomato paste, Worcestershire, paprika, chili powder, allspice, cinnamon, garlic powder, black pepper, and salt to a saucepan.
- Break up the beef: Stir well while the beef is still raw so it breaks into very fine pieces.
- Simmer: Simmer for 30 to 40 minutes, stirring often, until thick and smooth.
- Heat the weiners: Steam or simmer the weiners until hot.
- Steam the buns: Steam the buns lightly.
- Build: Place a weiner in each bun.
- Add mustard: Add yellow mustard.
- Add sauce: Spoon on meat sauce.
- Add onions: Add chopped onions.
- Finish: Finish with celery salt.
