History

Fry sauce is one of Utah’s most famous food signatures. The basic mix of ketchup and mayonnaise exists in plenty of places, but Utah made it a cultural identity. In the Beehive State, fries do not just come with ketchup; they come with fry sauce, and everyone has a preferred ratio.

The sauce is most famously tied to Don Carlos Edwards, founder of Arctic Circle. Edwards opened the first Arctic Circle restaurant in Salt Lake City in 1950, and the chain is widely associated with popularizing fry sauce in Utah by the mid-1950s. The exact origin has a little condiment fog around it, but Arctic Circle’s role in making it a Utah staple is central.

Fry sauce spread through burger stands, drive-ins, diners, school cafeterias, and family kitchens. Some versions are just ketchup and mayo. Others add pickle juice, garlic powder, barbecue sauce, hot sauce, Worcestershire, or a secret ingredient that is almost certainly not as secret as everyone says.

A good fry sauce should be tangy, creamy, slightly sweet, and thick enough to cling to fries. It is not fancy. It is not trying to be aioli. It is fry sauce, and Utah would like another cup.
