Comeback sauce is Mississippi’s tangy, creamy, orange-pink dipping sauce made with mayonnaise, ketchup or chili sauce, Worcestershire, lemon, garlic, and spices. Put it on crackers, fries, shrimp, burgers, fried pickles, or anything that needs a reason to come back.

History

Comeback sauce is one of Jackson, Mississippi’s signature foods. Its exact origin is debated, but it is strongly tied to Greek-owned restaurants in Jackson during the early 20th century.

The Mayflower Café is the restaurant most famously associated with it, and some stories credit Mayflower founders George Kountouris and John Gouras. Other accounts point to another Greek-owned Jackson restaurant, The Rotisserie, as the earlier source. Either way, comeback sauce became a Jackson restaurant tradition.

The sauce began as a house dressing or dipping sauce and spread across Mississippi menus. It is often compared to remoulade, Thousand Island, or fry sauce, but comeback has its own sharper, spicier, more Southern personality.

Part of the tradition is eating it on saltine crackers before the meal. That may sound like a humble appetizer, but in Jackson, a sleeve of crackers and a dish of comeback sauce can disappear very quickly.
