Beer Brats

Quick Bite

Wisconsin beer brats are bratwursts simmered in beer and onions, then grilled until browned and tucked into a sturdy bun with mustard, sauerkraut, or more onions. They are smoky, juicy, beer-soaked, and basically summer cookout citizenship in Wisconsin.

History

Beer brats belong to Wisconsin’s deep German-American sausage culture. German immigrants brought bratwurst traditions to the state, and Wisconsin’s love of brewing, tailgating, festivals, and backyard grilling turned the brat into something close to a state food group.

Sheboygan is especially important in Wisconsin brat culture and proudly calls itself the Bratwurst Capital of the World. The city’s Brat Days festival grew from a 1950s community brat fry into a major celebration of bratwurst, music, and very Wisconsin enthusiasm for grilled sausage.

The beer brat method is both flavorful and practical. Brats are simmered gently in beer with onions, then finished on the grill for browning and snap. The beer bath can also hold cooked brats warm during a party, which is useful when your guests arrive in waves and everyone wants “just one more.”

A proper Wisconsin brat should be served on a sturdy bun or hard roll, not a flimsy hot dog bun that gives up halfway through. Brown mustard, sauerkraut, onions, and pickles all make sense. Ketchup is where debates begin.
