- Prepare the lettuce: Place the lettuce in a large heatproof bowl.
- Cook the bacon: Cook the chopped bacon in a skillet until crisp.
- Set bacon aside: Remove bacon with a slotted spoon and set aside.
- Save the drippings: Leave about 2 tablespoons bacon drippings in the skillet.
- Make the dressing: Add vinegar, sugar, salt, and pepper to the hot drippings. Stir until the sugar dissolves.
- Wilt the lettuce: Pour the hot dressing over the lettuce.
- Toss: Add green onions and toss quickly, just until the lettuce begins to wilt.
