- Scrub the potatoes: Scrub the potatoes well.
- Slice: Slice them very thin with a mandoline or sharp knife.
- Rinse: Rinse the slices in cold water until the water runs mostly clear.
- Soak and dry: Soak for 30 minutes, then drain and dry very thoroughly.
- Heat the oil: Heat oil to 325°F.
- Fry: Fry the potato slices in small batches until golden and crisp.
- Drain: Drain on paper towels or a rack.
- Salt: Salt while hot.
