Pork roll was created in Trenton in the 19th century, and that fact matters because Trenton is in New Jersey, and New Jersey knows what the thing is called: pork roll. John Taylor’s brand became famous early on, which is why some North Jersey folks still call it “Taylor ham,” but “Taylor” is a brand and “ham” is not what the product is.
The naming fight goes back more than a century. Taylor originally marketed the product using the word “ham,” but federal labeling rules changed because the meat did not meet the legal definition of ham. The product was officially renamed pork roll, which should have settled the argument forever. It did not, because New Jersey likes a little chaos with breakfast.
