History
The pepperoni roll is West Virginia’s most iconic food, and it is strongly tied to Fairmont and the coalfields of north-central West Virginia. Italian immigrant coal miners needed lunches that were filling, portable, and did not spoil easily underground. Bread and pepperoni made sense together, and baking the pepperoni inside the bread made it even better.
Giuseppe “Joseph” Argiro of Country Club Bakery is the name most often credited with commercializing the pepperoni roll. Country Club Bakery says Argiro created the roll in Marion County in the 1920s and opened the bakery in 1927 after the rolls became popular with miners.
The genius is in the baking. As the roll cooks, pepperoni fat melts into the bread, seasoning it from the inside. That means a proper pepperoni roll should not just be bread with meat hiding inside; the dough itself should taste peppery, oily, and rich in the best possible way.
Today, pepperoni rolls are everywhere in West Virginia: bakeries, gas stations, school lunches, convenience stores, diners, grocery counters, and care packages sent to people who moved away and miss home. Some have cheese, some use sticks, some use sliced or ground pepperoni, and everyone has an opinion.

- Flatten: Flatten each piece into a small rectangle.
