A Modjeska is a soft marshmallow dipped in buttery caramel. It is a Louisville-born candy with a fancy name, a sweet center, and serious old-fashioned charm.

History

The Modjeska was created in Louisville in the 1880s by confectioner Anton Busath. He named the candy in honor of Helena Modjeska, the famous Polish actress who performed in Louisville and captivated audiences there.

The candy itself is simple but elegant: a marshmallow center wrapped in caramel. Busath reportedly asked permission to use Modjeska’s name, and the candy became a local tribute to a stage star.

Other Kentucky candy makers later made their own versions. Bauer’s Candies in Lawrenceburg is one of the best-known names today, and Muth’s Candies in Louisville also keeps the tradition alive.

Modjeskas feel like a different era of candy making: hand-wrapped, soft, buttery, and proudly regional. They are not flashy like neon gummies or giant candy bars. They are quiet, elegant, and dangerously easy to eat one after another.

  1. Prepare the marshmallows: Line a baking sheet with parchment paper. Place marshmallows on the sheet and chill while making caramel.
  2. Start the caramel: In a heavy saucepan, combine granulated sugar, brown sugar, corn syrup, cream, butter, and salt.
  3. Cook: Cook over medium heat, stirring, until the mixture reaches 245°F on a candy thermometer.
  4. Add vanilla: Remove from heat and stir in vanilla.
  5. Cool slightly: Let the caramel cool slightly until thick but still fluid.
  6. Dip: Using a fork or candy dipper, dip each marshmallow into the caramel.
  7. Set: Place on parchment and let set.
  8. Wrap: Wrap individually in wax paper if desired.
Traditional note: To make it more traditional, use homemade marshmallows and hand-dip them in soft caramel. The candy should be tender, buttery, and individually wrapped.
