History

Joe’s Special originated in San Francisco in the 1920s, and its story is closely tied to the city’s late-night dining culture.

The dish is credited to New Joe’s Restaurant, a popular spot near the city’s jazz clubs and theaters. Musicians and performers finishing late shows wanted something quick, filling, and affordable. The kitchen improvised by scrambling ground beef, eggs, and spinach, ingredients that were inexpensive, easy to keep on hand, and fast to cook.

What began as an off-menu solution for hungry night owls quickly became a customer favorite. Regulars started asking for “Joe’s special,” and the dish earned a permanent place on the menu. Its popularity spread beyond the restaurant, eventually appearing in diners and cafés throughout San Francisco and Northern California.

Over time, Joe’s Special became a symbol of old-school California comfort food: simple, protein-packed, and endlessly practical. Nearly a century later, it remains a beloved classic, especially on breakfast and brunch menus, preserving a small but flavorful piece of San Francisco food history.

Recipe

Serves 2–3

Ingredients

  • ½ lb ground beef (80/20 works best)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 4 cups fresh spinach (packed)

  • 4 large eggs

  • 1–2 tbsp olive oil or butter

  • Salt and freshly ground black pepper, to taste

  • Optional: grated Parmesan cheese, pinch of nutmeg, or sliced mushrooms

Preparation & Cooking Instructions

  • Brown the beef
    Heat a large skillet over medium heat. Add the olive oil or butter, then the ground beef. Cook, breaking it up with a spoon, until browned and cooked through. Season lightly with salt and pepper.

  • Add aromatics
     Stir in the chopped onion and cook for 3–4 minutes, until soft and translucent. Add the garlic and cook for about 30 seconds, just until fragrant.

  • Wilt the spinach
     Add the spinach to the skillet a handful at a time. It will look like a lot at first, but it wilts quickly. Stir until fully wilted and combined with the beef.

  • Scramble the eggs
     Lightly beat the eggs in a bowl. Reduce heat to medium-low, then pour the eggs into the skillet. Stir gently until the eggs are just set and softly scrambled, coating the beef and spinach.

  • Finish and serve
     Taste and adjust seasoning. Add a pinch of nutmeg or a sprinkle of Parmesan if using. Serve immediately.
