Grandma Pie

Quick Bite

Grandma pie is a thin, square or rectangular pizza with a crisp olive-oil crust, mozzarella, garlic, and tomato sauce. It tastes like Long Island home cooking that wandered into a pizzeria and became a star.

History

Grandma pie is closely tied to Long Island’s Italian-American home kitchens. Before it became a slice-shop staple, it was the kind of pizza a grandmother might make at home in a regular pan, without a professional pizza oven or dramatic dough-tossing performance.

The dough is pressed into an oiled sheet pan, topped simply, and baked until the bottom gets crisp and golden. Compared with Sicilian pizza, grandma pie is usually thinner, less bready, and more about the balance of crisp crust, cheese, tomato, garlic, and olive oil.

Umberto’s of New Hyde Park is one of the most important names in the style’s rise. The restaurant describes itself as home of the original Grandma Slice since 1965, and it helped move grandma pie from family kitchens into New York pizzeria culture.

Today, grandma pie appears all over New York and far beyond, but Long Island remains its spiritual home. A good one should be crisp underneath, saucy on top, garlicky but not overwhelming, and sturdy enough to eat by hand without sagging into regret.

Fun Facts

  • Grandma pie is usually thinner than Sicilian pizza.
  • It is strongly associated with Long Island.
  • The crust gets its crispness from baking in an olive-oiled pan.
