Frito Pie

Quick Bite

Frito pie is a bag or bowl of Fritos topped with red chile, beans or meat, cheese, and onions. It is crunchy, saucy, salty, and one of Santa Fe’s great eat-it-with-a-plastic-spoon foods.

History

Frito pie has a disputed origin, with Texas and New Mexico both making claims, but Santa Fe has one of the most famous stories. The New Mexico version is strongly tied to the old Woolworth’s lunch counter on the Santa Fe Plaza, where it was served right in the Fritos bag.

The beauty of Frito pie is its simplicity. Split open a small bag of Fritos, spoon in hot red chile or chili, add cheese and onions, and eat it with a plastic spoon. It is portable, cheap, filling, and perfectly suited for fairs, ball games, plazas, school events, and road trips.

The New Mexican version leans on chile rather than generic chili. Red chile sauce, beans, beef, cheese, and onions bring the flavor into New Mexico territory, especially when the chile has that earthy local depth.

Today, Frito pie remains a beloved snack and comfort food. It can be humble in a chip bag or dressed up in a restaurant bowl, but the bag version has the strongest nostalgic pull.
