History

Deviled crabs are one of Florida’s most historic and distinctive foods, especially associated with Tampa and the immigrant community of Ybor City.

The dish emerged in the late 1800s and early 1900s, when Tampa’s booming cigar industry attracted Cuban, Spanish, and Italian workers. These communities brought their own culinary traditions and adapted them using local Gulf seafood. Blue crab was plentiful along Florida’s Gulf Coast, making it an affordable and flavorful ingredient for working families.

Deviled crabs were created by mixing crab meat with breadcrumbs, onions, and spices, often with a touch of heat. The term “deviled” historically referred to spicy foods. The mixture was then shaped, coated in breadcrumbs, and fried until crisp. Portable and filling, they became a popular lunch item for factory workers.

In Ybor City, the deviled crab developed a signature shape resembling a torpedo or football, making it easy to carry and eat by hand. Vendors and neighborhood cafés sold them alongside other Cuban-influenced favorites like the Cuban sandwich and croquetas.

Over time, deviled crabs became a beloved symbol of Tampa’s multicultural food heritage, blending Spanish-style seafood traditions, Cuban seasonings, and Florida Gulf ingredients. Today, they remain a celebrated regional specialty and a reminder of the city’s immigrant history.

  1. Make the filling: Heat butter in a skillet over medium heat.
  2. Cook onion and bell pepper until softened, about 5 minutes.
  3. Add garlic and cook for 30 seconds.
  4. Add seasoning: Stir in tomato sauce, hot sauce, paprika, cayenne if using, and Worcestershire sauce.
  5. Cook for 2 minutes.
  6. Add crab: Gently fold in crab meat, parsley, and 1 cup breadcrumbs.
  7. Season with salt and pepper.
  8. Remove from heat and let cool slightly.
  9. Bind mixture: Stir in beaten egg until the mixture holds together.
  10. Chill for 20–30 minutes if the mixture is too soft.
  11. Shape: Form into oval, football, or torpedo shapes, about palm sized.
  12. Bread them: Dip each deviled crab into beaten egg.
  13. Coat in breadcrumbs.
  14. Fry: Heat oil to 350°F.
  15. Fry for 3–4 minutes until golden brown.
  16. Drain on paper towels.
  17. Serve: Serve hot with lime wedges, hot sauce, or mustard.
Serving note: For the most Tampa-style presentation, shape them like small footballs or torpedoes and serve them hot enough to live up to the “deviled” name.
