History

Chislic is one of South Dakota’s most iconic foods, especially in the southeastern part of the state. It is usually traced to German-Russian immigrant communities who settled in the region in the late 1800s and brought traditions of skewered or cubed meat with them.

The basic dish is wonderfully direct: small cubes of meat, traditionally lamb or mutton, cooked quickly and seasoned simply. Over time, beef, venison, and even other meats joined the party. Some places deep-fry chislic, some grill it, and some serve it on skewers, but the spirit is the same — hot meat, bold seasoning, no unnecessary fuss.

Chislic became a bar, supper club, and community-event staple. It shows up at small-town restaurants, taverns, festivals, and family gatherings, especially around Freeman, Menno, Yankton, and Sioux Falls. In 2018, South Dakota made chislic the official state nosh, which is one of the more charming food titles a state can hand out.
